When we say, let's have a "Creuset" around here, we are likely speaking about this dish! Again, comfort food for the ages. 

You need a large piece of fatty beef, affordable cut, chuck or similar. "Bon, pas cher", cheap and cheerful. Bone in or out, doesn't matter. 


Brown the beef in the Dutch oven pot, canola oil, some chopped onion. I love tons of salt, pepper, dried rosemary, garlic salt and some paprika. Sprinkle a little flour on the beef and don't move it around in the pot until browned. Then flip. 

Once done on both sides, add: can of tomatoes, whole or diced and liquid until 3/4 up the sides of the beef ex: wine, chicken stock, water with Bovril etc. Throw into the pot: a head of garlic in skin and a few bay leaves. 

Cover meat with a piece of parchment paper or foil and pop the pot into the oven at 275F degrees for about 3 hours. Meat will fall apart. 

Serve atop any pasta, spaghetti squash or even better...soft cheesy creamy polenta! Garnish with finely chopped parsley and lemon zest and/or lots of parm cheese. Yum!
