When I am on a low carb kick, I crave this dish.  It is beyond delicious. The KEY is in creating a vibrant combination of sweet caramelized onions with a toasted turmeric and cumin spice mix, and of course...delectable gooey yolky eggs.
 
You will need a large non stick frying pan, and tailor the amount of ingredients based on how many people you are serving.  This recipe will cover 2 people:
 
On medium heat, rough chop 2 large onions, biggish pieces, and sauté in olive oil until just golden- be patient! This creates the depth of flavor...
Add generous amount of turmeric, a couple of tbsps
Add some cumin, as much as you like
Add 1 or 2 cloves of chopped garlic
Add a couple of chopped or sliced tomatoes
Crack 4 extra large eggs on top
 
Cover the pan and let simmer on low to medium heat until eggs are cooked to your liking.  Add fresh parsley on top when serving.  It is so colorful and totally appealing to all of the senses!
